a.k.a. texas sheet cake

Ingredients

Cake:

  • 2 cups flour
  • 2 cups sugar
  • 2 sticks oleo (Nathan: I use butter)
  • 1/4 cup cocoa
  • 1 cup water
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • optional: 1/2 tsp cinnamon

Icing:

  • 1 stick oleo (Nathan: I use butter)
  • 1/4 cup cocoa
  • 4 tbsp milk
  • 1 tsp vanilla
  • 1 pound box confectioner’s sugar

Directions

Cake:

  1. Preheat oven to 400 F.
  2. Put in large mixing bowl 2 cups flour, 2 cups sugar.
  3. Heat to boiling point 2 sticks oleo, 1/4 cup cocoa, 1 cup water.
  4. Pour over flour and sugar and beat well.
  5. Add 2 eggs, 1 tsp baking soda, 1/2 cup buttermilk, 1 tsp vanilla, 1/2 tsp cinnamon; beat well.
  6. Pour into brownie sheet and bake 20 minutes.

Icing:

(Great Aunt Pauline: last five minutes of baking time, prepare icing.)

  1. In same pan you used before, put 1 stick oleo, 1/4 cup cocoa, and 4 tbsp milk. Heat to boil.
  2. Beat in 1 tsp vanilla,, and 1 pound box confectioner’s sugar.
  3. Take cake out of oven and ice while warm.

I like to eat/serve it chilled.
